April 12 is a new day for fast food—the iconic White Castle is selling burgers with plant-based meat developed by Impossible Foods, who will have to majorly up its production capabilities.

Instead of beef, the sliders in White Castle’s Impossible Burger are made from wheat, coconut oil, potatoes, and an iron-containing compound known as heme.

To supply White Castle, Impossible Foods will rely on a 70,000-foot (6,500 sq/m) production facility in Oakland, California that can churn out more than 1 million lb (454,000 kg) of burgers per month.

White Castle will start selling the plant-based burgers at 140 locations in Chicago, New York, and New Jersey. If it goes well, it plans to take it to stores across the US.
