Shrimp made from algae that looks and tastes like the real thing

Shrimp, the United States’ most popular seafood, is notorious for being farmed using practices that destroy the environment. New Wave Foods, a startup based in San Francisco, has set out to create a sustainable replacement. The key ingredient in its “shrimp”, which is actually 100% vegetarian, is algae, a plant that is already found in everyday items like toothpaste and ice cream. The algae gives New Wave Foods’ shrimp its pinkish color and ocean smell.
