Shrimp, the United States’ most popular seafood, is notorious for being farmed using practices that destroy the environment. New Wave Foods, a startup based in San Francisco, has set out to create a sustainable replacement. The key ingredient in its “shrimp”, which is actually 100% vegetarian, is algae, a plant that is already found in everyday items like toothpaste and ice cream.
